A Small Japanese Restaurant That Truly Stands Out

We started with sweet shrimp gunkan.

The seasonal star of the night was the Kobako crab. The shell was filled with:

Tender, hand-picked crab meat

bright, popping roe

rich kani miso

It’s luxurious without being heavy — layered, savory, and deeply satisfying. You usually expect this quality in high-end omakase, but finding it in a cozy neighborhood restaurant feels like a treat.

Opah (鬼頭刀) — Two Ways

The chef served opah, a local Taiwanese fish, in two styles:

Lightly torched sashimi with a soft smokiness

Nigiri topped with fragrant shavings

Both versions highlighted the fish’s firm texture and gentle sweetness, with a touch of citrus to brighten the flavor.

 

There are many small Japanese restaurants in Taiwan, but あめ辰鮨・小料理 stands out for its sincerity and care.
Nothing here feels mass-produced. Every dish feels personal.

What makes it even more charming is that the menu changes from time to time, depending on seasonal ingredients and what the chef finds fresh that day. So each visit brings something new — which gives you a reason to keep coming back.
